In this article I am going to show you how I make almond flour banana bread.
Ingredients
Lets take a close look at the ingredients.
3 large eggs or 4 small eggs
1/4 cup vegetable shortening (I use organic vegetable shortening)
1 Tbs Vanilla extract
2 Tbs honey (I used raw honey)
3 ripe bananas (1-1/2 Cup mashed)
2 cups blanched almond flour
1/2 tsp sea salt
1 tsp baking powder
1/2 cup crushed walnuts (Optional)
The 100% almond flour will yield the lowest carbs, but 1-1/2 cups almond flour with 1/2 cup of coconut flour will work as well.
The walnuts are optional, I have made the bread without them. I have also added stevia chocolate chips with great success.
If you want to go paleo, use palm shortening.
Mix Wet Ingredients
Add the eggs to a food processor, mixer or bowel for hand mixing.
Add the shortening.
Add the Vanilla.
Add the honey.
Pulse mix the ingredients if you are using a food processor or blender. Don’t over mix.
Mix Dry Ingredients
Add the bananas mashed or cut to the mixer, blender or bowel.
Pulse mix.
Add the salt.
Add the baking powder.
I am using a small 7 cup food processor so I added only 1/2 of the almond flour (1 cup).
With a larger food processor all the almond flour can be added at once.
Pulse mix.
Add the rest of the almond flour.
Pulse mix.
Add the walnuts (Optional).
You can add chocolate chips or some other fruit if you wish.
Bake
here I used a 9.5” x 5” nonstick bread pan. I took some of the shortening and greased the pan to make it easier to remove the bread after it is baked.
I have also used silicone bread pans with success.
The mixture is added to the bread pan.
The bread is placed into a preheated oven and baked at 350F for about 50 minutes.
The bread will cook in about 50-55 minutes. At 50 minutes, I always check the bread with a toothpick.
If it comes out clean the bread is done.
The bread is removed from the oven and let cool for 1 hour.
Serve
Once the bread has cooled, I take a thin spatula and separate the edges of the bread from the pan.
This will allow you to remove the bread from the pan without breaking apart.
Slice the bread and serve.
Conclusion
